SUMMARY:Joint IAFNS/AOCS Webinar on Interesterified Oils in Food
DESCRIPTION:Register here \nInteresterified oils are used by the food industry as a replacement for partially hydrogenated fats\, offering the functionality of solid fats—such as texture\, stability\, and mouthfeel—without producing trans fatty acids. Through a chemical or enzymatic process\, the fatty acids on triglycerides are rearranged\, allowing manufacturers to tailor melting profiles and performance for baked goods\, spreads\, and confectionery. From a food science perspective\, this innovation has been critical in maintaining product quality while meeting regulatory and consumer demands. From a nutrition standpoint\, the picture is more nuanced. While interesterified fats eliminate trans fats\, questions remain about how these structural modifications influence lipid metabolism\, glucose regulation\, and long-term cardiovascular health. This webinar will explore both dimensions—the technological rationale driving their use in modern food systems and the emerging nutrition science.

SUMMARY:Dry Sanitation and Cleaning Techniques for Facilities and Equipment
DESCRIPTION:Register here \nFacility sanitation\, including equipment cleaning and decontamination\, must be approached differently in dry and low-moisture food processing plants. Water use in these facilities can promote microbial growth\, especially for pathogens like Salmonella that persist in dry environments. Processors must rely on alternative methods such as vacuuming\, brushing\, dry steam\, compressed air\, and low-moisture/no-rinse sanitizers to ensure a safe environment for producing food. Furthermore\, facility personnel must follow strict protocols for donning and doffing PPE to avoid introducing water residue\, and sanitation teams must follow a systematic\, top-down approach for equipment disassembly and cleaning. Environmental monitoring programs help confirm the efficacy of dry sanitation and equipment cleaning. \nIn this webinar\, experts from the International Dairy Foods Association (IDFA)\, industry\, and academia will conduct a deep dive into the science\, industry guidance\, and practice of dry sanitation and equipment cleaning. Attendees will gain an understanding of the unique considerations for dry/low-moisture facility sanitation\, the hazards posed by improper or inadequate sanitation in these facilities\, and the techniques and best practices employed by dry/low-moisture food processors to ensure a clean facility environment for the production of safe food. \nFrom this webinar\, attendees will learn:  \n\nThe unique considerations and techniques for dry/low-moisture facility sanitation and equipment cleaning\nThe hazards posed by improper or inadequate sanitation\, including pathogenic contamination of food products and resident bacterial strains\nThe best practices employed by dry/low-moisture food processors for dry sanitation and equipment cleaning

SUMMARY:Feeding the Future: How Lessons From 2025 Will Shape 2026
DESCRIPTION:Register here \nThe defining lesson of 2025 is that resilience\, not reactivity\, must become the global food sector’s new standard. Supply chains were tested by climate disruption\, geopolitical shocks\, and surging costs\, while consumer expectations and regulatory requirements continued to rise. At the same time\, businesses deepened their use of digital tools and began to test AI to strengthen transparency\, traceability and risk prediction—although many still face barriers from fragmented data and cultural resistance. \nLRQA’s latest food safety and culture benchmark confirms that most organizations now operate at a compliance-driven level\, with culture and early risk identification remaining the weakest links. The opportunity for 2026 lies in moving further upstream: embedding predictive insight\, strengthening human factors\, and redefining food safety KPIs alongside financial and sustainability metrics. \nThis webinar will bring together LRQA experts and industry leaders to examine how the events and lessons of 2025 will shape 2026. From managing new legislative requirements to addressing rising consumer scrutiny and “cancel culture\,” panelists will explore how businesses can build food systems that are digitally enabled\, culturally strong\, and capable of anticipating and preventing disruption.

SUMMARY:Preventing Foreign Material Contamination with the FM Maturity Model
DESCRIPTION:Register here \nIn all food processing\, preventing the contamination of finished products with foreign material (FM) is key to ensuring food safety. Examples of FM include pieces of metal\, rock\, glass\, plastic\, rubber (such as pieces of glove)\, bone fragments (above a certain size)\, and other extraneous materials. To help industry—in particular meat and poultry processors—reduce incidents of FM contamination\, a group of food companies banded together during the COVID-19 pandemic to develop a model for FM assessment and prevention. The companies invited the North American Meat Institute (NAMI\, now known as The Meat Institute) to help develop and publish this model in 2023. Our speakers\, who represent two of the companies that led the development of the model\, will discuss the best practices and corporate- and plant-level guidance shared in the “Foreign Material Maturity Model.” They will also discuss key points for conducting an FM Maturity Model Self-Assessment. \nFrom this webinar\, attendees will learn:  \n\nCommon conditions/incidents leading to FM contamination\nBest practices for prevention of FM contamination at the corporate and plant levels\, as outlined in the industry-developed “Foreign Material Maturity Model”\nKey points for conducting an FM Maturity Model Self-Assessment\nExamples of “do’s” and don’ts” when addressing FM issues
