Kemin Food Technologies Launches InnoBLQ™ Clean Label Functional Protein for Breaded, Battered and Fried Foods at IFT23

Global ingredient manufacturer debuts fat-block solution at the Institute of Food Technologists Annual Meeting and Exposition

DES MOINES, Iowa (July 14, 2023) – Kemin Industries, a global ingredient manufacturer that strives to sustainably transform the quality of life every day for 80 percent of the world with its products and services, will launch its new fat-block topical solution, InnoBLQ, in North America at the Institute of Food Technologists 2023 annual meeting and exposition (IFT23) in Chicago on July 16 – 19.

With plans for future launches in other regions, InnoBLQ enhances yields and improves quality while retaining moisture and reducing the amount of fat uptake in commercial production of battered and fried foods. The clean label functional protein acts as a micro-barrier, enabling less waste in processing and improving batter adhesion for a crispier, more enticing bite.

“InnoBLQ is a game changer for the industry,” said Courtney Schwartz, Marketing Director, Kemin Food Technologies – North America. “Higher moisture and reduced oil provide an improved sensory experience for the consumer, and a solution applied prior to submersion in frying oil acts as a micro-barrier to retain moisture during the frying process. Depending on the application, InnoBLQ can reduce oil uptake by 25 – 30% while providing moisture retention and increased yield—all with a potential to reduce cost-in-use. InnoBLQ makes it possible for brands to help reduce costs, improve yield and quality—and please consumers—with breaded, battered and fried food products.”

InnoBLQ is a clean label option available as both an animal protein and plant-based protein, depending on formulation needs. When applied topically, InnoBLQ can help improve the quality of breaded, battered and fried foods and offers many exciting benefits, including:

  • Improved bite and texture with a natural taste, appearance and feel.
  • Increased yields by retaining moisture throughout the entire processing and cooking process, which can increase cook yield for better plate coverage.
  • Reduced added fat in finished foods by up to 50% depending on the application, as the micro-barrier formed via topical application reduces overall oil absorption into the product.

In addition to debuting InnoBLQ during IFT23, Kemin experts will be at booth #S2410, highlighting Kemin Food Technologies – North America’s complete line of clean label ingredient solutions, including antioxidant and functional ingredient technologies that assist the food industry in keeping production costs down and food waste to a minimum.

“Oxidation is the culprit that shortens shelf life of packaged foods and creates food waste,” said Schwartz. “Kemin offers label-friendly, plant-derived oxidation control solutions that significantly delay the onset of lipid oxidation to lengthen product’s shelf life while maintaining a simple ingredient deck of numerous applications.”

Kemin solutions help the food industry create better tasting, better performing and longer lasting foods, including:

  • Meat and poultry products
Kemin functional proteins can help increase yield and quality, improve moisture retention and extend shelf life. With Kemin’s oxidation and food safety solutions that protect from oxidation and pathogens, meat can retain color and poultry flavor can stay fresher for longer.
  • Tortilla and bakery products
Kemin tortilla and bakery solutions—from complete drop-in solutions and premixes to individual functional ingredients such as dough conditioners and softeners, mold inhibitors, enzymes, emulsifiers and gum blends—can help manufacturers keep baked goods fresh and appealing. Available in liquid and dry varieties with clean label, organic and non-GMO options available, Kemin solutions help manufacturers continue offering high-quality products consumers love.
